Clock and date

I'm running a simulation at the moment. I depend on the date and time to check on whether the student has sent a document after they received instructions from the tutor. However, the clock is wrong - the date and time are out by a few hours. How do I ensure this is set correctly?

SIMPLE shouldn't be using any timezone offsets or similar so the clock used is based on the server's system clock, so it is important that this is set correctly on the server.
